My a1c is 5.3 (checked Nov 2024). Could definitely start the day with protein, we usually eat overnight oats during the week (with cinnamon, banana, peanut butter and a bit of chocolate sprinkles). Not sure how to add protein to that? Powder...?

@Glenicia Mitchell yes, no shitty peanut butter. When I moved to sxm I was amazed! Took me a while but to find something good. We're eating all natural smuckers for years now, worth the money; tastes great! We are a sweet tooth family, the oats are the old fashioned kind. Fibre in the morning is also very important, as I have a history of IBS. So, I will definitely try to blend in the chickpeas. Just made chickpea chocolote chip cookied recently, and they are also tasty!

I'm putting together our calendars and wondering if you guys would love to Pre-prep once a week with me on a zoom call? What's pre-prep you ask? It's the art of Mise-en-Place, which means put in place. It's a highly regarded culinary technique used across the world in restaurants and F&B businesses to speed up service, maintain the integrity of food and to assure quality control. Not only that but it reduces waste and allows you to be creative with your meals as the week tugs along. You wont be stuck with the same meals for 7 days straight! During these weekly sessions... we would discuss, prep techniques, health hazards and safety tips and The ingredient stack that could be made (recipes following the Nourish Nook technique of linking ingredients). What you could expect: - Weekly Menu ideas: We'll give you some ideas of how to stack your Pre-preps. The things we'll prepare are sauces, sides, marinades and mixes that can be easily steamed, boiled, baked, blended or other. - Shopping List: I'll give you the menu and the items you need every Wednesday and we can cook on a specific day of the week. - Meal Pre-Prep Day: This isn't about cooking whole meals each week, but rather a technique that promotes consistency. It assures that every time you stretch for something in cold or dry store, it’s something healthy, easy to pair and light on time. What day of the week works best for you, what would it mean for you to gain some time back, and still be able to eat healthy without it feeling bothersome? Some techniques on how to keep veggies fresh, I have a small freezer. So, I rely a lot on the same ingredients as I don't have space for more. But I do have a decent size fridge... just in the past notice things going meh in the fridge. So, haven't used many fresh veggies for a while. Also how to increase iron would be useful.

We don't celebrate, so a regular day. Breakfast was overnight oats with banana, peanutbutter and a little bit of chocolate sprinkles. Lots of stuff to do and not much energy, so we had lunch at barefoot cafe. I had a chickenroti with a side salad and in the night it was rösti and chicken nuggets. So, after the kids went to bed, I did paint by number with ginger tea and a piece of dark chocolate. To try and mitigate the not so healthy lunch and dinner.

Living in Sint Maarten, I love to cook and I'm almost always hungry😅 about 6 years ago I went on a spiritual and physical journey to figure some stuff out. This helped me repair long time gut issues. I grew up with lots of grandmother's wisdom/tricks and have always tried to fix things naturally. So, I feel this is right up my alley. I'm looking forward to learn, especially recipes to increase my repertoire and have my kids eat as versatile as possible.
