Instructions
Prepare the Dough:
- In a mixing bowl, combine flour, sugar, and salt.
- Add the cold, cubed butter and mix with a pastry cutter or fork until the mixture resembles coarse crumbs.
- Gradually add the ice water, 1 tablespoon at a time, until the dough starts to come together. Avoid overmixing.
- Divide the dough into two equal parts, shape into discs, wrap in plastic, and refrigerate for at least 30 minutes.
Make the Apple Filling:
- In a medium saucepan over medium heat, combine diced apple, brown sugar, granulated sugar, cinnamon, nutmeg, and lemon juice.
- Cook for 5–7 minutes, stirring occasionally, until apples soften.
- Stir in cornstarch and cook for another 1–2 minutes until the filling thickens. Remove from heat and let cool completely.
Assemble the Pop Tarts:
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Roll out one disc of dough on a lightly floured surface to a rectangle, about ⅛-inch thick.
- Cut the dough into 8 equal rectangles (approx. 3x4 inches each).
- Place a heaping tablespoon of apple filling onto half of the rectangles, leaving a small border around the edges.
- Top with the remaining rectangles, pressing the edges down with a fork to seal.
- Brush the tops with a little milk or beaten egg for a golden finish.
Bake:
