Ingredients
For the Dough

  • 1 tbsp cornstarch
For the Icing
  • ½ cup powdered sugar
  • 1-2 tbsp milk
  • ¼ tsp cinnamon (optional for a spiced icing)
  • Optional garnish: pinch of cinnamon, extra apple pieces for topping
Instructions
Prepare the Dough:
  1. In a mixing bowl, combine flour, sugar, and salt.
  2. Add the cold, cubed butter and mix with a pastry cutter or fork until the mixture resembles coarse crumbs.
  3. Gradually add the ice water, 1 tablespoon at a time, until the dough starts to come together. Avoid overmixing.
  4. Divide the dough into two equal parts, shape into discs, wrap in plastic, and refrigerate for at least 30 minutes.
Make the Apple Filling:
  1. In a medium saucepan over medium heat, combine diced apple, brown sugar, granulated sugar, cinnamon, nutmeg, and lemon juice.
  2. Cook for 5–7 minutes, stirring occasionally, until apples soften.
  3. Stir in cornstarch and cook for another 1–2 minutes until the filling thickens. Remove from heat and let cool completely.
Assemble the Pop Tarts:
  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Roll out one disc of dough on a lightly floured surface to a rectangle, about ⅛-inch thick.
  3. Cut the dough into 8 equal rectangles (approx. 3x4 inches each).
  4. Place a heaping tablespoon of apple filling onto half of the rectangles, leaving a small border around the edges.
  5. Top with the remaining rectangles, pressing the edges down with a fork to seal.
  6. Brush the tops with a little milk or beaten egg for a golden finish.
Bake:
  1. Place the pop tarts on the prepared baking sheet and bake for 18–20 minutes, or until golden brown.
  2. Let the pop tarts cool on a wire rack.
Make the Icing:
  1. In a small bowl, whisk together powdered sugar, milk, and cinnamon (if using) until smooth.
  2. Drizzle over cooled pop tarts, sprinkle with a little extra cinnamon if desired, and enjoy!
