Pumpkin Spice Coffee Creamer
1 cup oatmilk
1 cup canned coconut milk (full fat)
¼ cup maple syrup or sugar substitute (like monk fruit sweetener)
⅓ cup pumpkin puree
2 ½ tsp pumpkin pie spice
1 tsp vanilla extract
Combine the first five ingredients in a saucepan. Whisk together and cook over medium-high heat for about five minutes until well-combined. Remove from heat and add the vanilla extract. This is the time you can adjust the sweetness and spices to your taste. Let it cool slightly and pour into a resealable jar, then refrigerate overnight. This makes about 2 ½ cups of creamer (a serving is about ¼ cup) and it will keep in your fridge for about a week or more. It’s so good!
Even if you don’t live in cool weather, you can make a great iced coffee with this!
