Waterglassing Eggs
To waterglass eggs using pickling lime, follow these steps:
  1. Gather Materials:
-Clean, unwashed, farm-fresh eggs (ensure they are not cracked or damaged).
-Pickling lime (hydrated lime, also known as calcium hydroxide).
-Filtered water.
-A clean glass or food-grade plastic container with a lid.
2. Prepare the Solution:'
-Measure 1 ounce (about 2 tablespoons) of pickling lime.
-Dissolve the pickling lime in 1 quart of filtered water. Stir well to ensure the lime is fully dissolved.
3. Submerge the Eggs:
-Carefully place the clean, unwashed eggs into the container.
-Pour the lime solution over the eggs until they are fully submerged. Ensure there is at least 2 inches of lime solution above the eggs to keep them covered.
4. Seal and Store:
-Seal the container with a lid.
-Store the container in a cool, dark place. The eggs can be stored for 12-18 months in this solution.
5. Use the Eggs:
-When ready to use, rinse the eggs thoroughly with water to remove the lime solution before cooking.
