Workshops to solve problems or find problems?
What type of workshops do you find yourselves doing the most? Is it problem solving when you have a clear problem in hand and you need to guide a group to a solution, OR is problem finding when it is more about discovery /aligning a group of people around what problem to solve? Which one do you prefer?

Design sprints are super engaging and useful to get focus in a fixed amount of time - if you can get the commitment. Design Thinking can be applied over a longer period and depending on the context you can go back and forth along the approach as you learn new information.
