If you don't have a good grasp on what your cpc's are then max clicks can help, but you should let it do it's thing. If you don't want to go into the learning phase you will need to do some cpc research and then optimize manually. The learning phase will eventually try and match up the best ways to read your ideal customer. It takes data to do this.
Is there any way to get further control over this spend?
from Google's "other Search Terms" ...pure and simple criminal behavior. Complete Money Grab. for a standard shopping campaign with "medium" priority..using phrase match for a Brand. Have a "hi priority" campaign to grab all the junk terms for this Brand as well. So in theory the terms going to the Medium should be fairly legit and focused. W....T....F?! I hate google.

I agree with a solid negative list and campaign structure. Additionally, I would likely exclude brand or isolate in it's own. Priority setting in shopping applies to when the same product is used. Use your negatives for this too for better results.
campaign structure for women's clothing store
What campaign structure would you recommend for a women’s clothing store? Currently, we only have a Performance Max (PMAX) campaign running, featuring our top 20 SKUs. This campaign drives 90 conversions per month at an average ROAS of 2.5, with a daily budget of €150 (which we can triple if necessary). The average order value (AOV) is €117. However, nearly all traffic comes from users actively searching for our brand, which isn't ideal, but we're keeping it due to the consistent sales. We’re considering launching a new shopping campaign, targeting 20 countries, featuring all 90 SKUs from our new collection, segmented by category. The goal is to gather more data. Over time, we plan to create dedicated campaigns for individual categories, focusing on key regions like the US, UK, Canada, and Australia. What do you think of this approach? Would you suggest any changes?

I was going to mention something like this for the brand keywords, I think you captured it pretty well. The only thing I would add is that Google states exact match keywords will take priority over other keyword type of PMax. Otherwise the Pmax will take precedence. So you could reduce your spend on branded with the above strategy. https://support.google.com/google-ads/answer/2756257?hl=en#zippy=%2Ca-campaign-is-limited-by-budget%2Cone-of-your-keywords-isnt-eligible-to-trigger-an-ad
Moving Asset Group from One Pmax Campaign to Another
So i have a several separate Pmax campaigns that were set up awhile ago. Individually they do ok but they are not getting more than 20-30 conversions a month. I set them up before i had a decent grasp of what to do and now i would like to combine them into one overarching Pmax campaigns divided by asset groups instead of several pmax campaigns. If i recreate the old asset group with all the same assets in the all encompassing Pmax campaign will i be dinged for this? I really want to get one pmax campaign that has the combined budget and get to 50-60 conversions a month. What do you guys think.

I would consider it worth a try if they are the same theme. Seems as if PMax works better with more conversion data. You could likely go back easily enough if the results are lacking. A side note, if you are using lead forms in any way that are specific to a product you can't have more than one lead form per Pmax.
Need help
I have run shopping ads for my client but don't get conversions yet. Can anyone share shopping strategies and tips on how to improve results?

Take a look at query sculpting. Take a look at GRIP if it applies. You can segment into best sellers and everything else. Negatives place an important role. Much of shopping optimization is through data feed.
